Polos Curry (Green Jack Fruit)
Ingredients:
3 cans of Young Green Jack fruit(Those who are living in abroad /Locals can buy normal size of Green Jack fruit )
1-2 green chillies
1/2 tsp pepper powder1 onion, chopped
1-2 tsp chili powder
1 tsp turmeric powder2 tsp garlic, chopped
2-3 tsp curry powder1 sprig of curry leaves (optional)
3-4 cloves
1 inch piece of Cinnamon stick3-4 cardamoms
1 can of coconut milk2-3 pieces of goraka
salt to taste
How to make:
Fist of all Put the pan on hearth or gas cooker with low flame, add the oil then after fry the onions, green chillies, garlic When the onion becomes golden color add chili powder in it if the oile is not enough add some oil to fry them all( Because after adding chili the mixture becomes dry)then add washed green jack fruit in to that pan and add 3 cups of water(If this water level is not enough add some water more -This is to boil the Green Jack Fruit) it will take about 30 min to 45 min to boil then after add coconut oil and all the spices and Goraka then add green leaves too.Now add salt according to the taste.Then boil them about about 20 min.This is enough for 6 persons.
Note:
# Some people boil the Green jack fruit in the pressure cooker and later directly add them into the coconut milk mixture then boil.
#If you add salt When you boil Green Jack fruit it doesn't allow Jack fruit to boil well so add salt after boiling Green Jack Fruit.

Dhal curry
Ingredients:
1 1/2 cups Mysore Dhal
1/2 tsp chillie powder
1 green chillie chopped
1/2 tsp saffron powder
1/2 curry powder
1 cup water
1 onion chopped
3-4 curry leaves(optional)
1 cup coconut milk
2 tsp oil
1/2 tsp mustard seed
2 chillies, broken into 2-3 pieces
2 cloves gralic, minced
1/4 lime
Salt to taste
How to make:
Wash the dhal well and put it in to bowl
Put the pan on hearth or gas cooker with low flame, add the oil, 1/2 tsp chillie powder
1 green chillie chopped'1/2 tsp saffron powder,1/2 curry powder,1 onion chopped,3-4 curry,leaves(optional),1/2 tsp mustard seed,2 chillies, broken into 2-3 pieces,2 cloves gralic, minced
Cook stirring for about 1-2 minutes.
Then get dhall and put it in to that pan boil it with 1 cup water,1/2 tsp saffron, 1/2 of the onion and the garlic. When the color of the dhal turns from pink to yellow Add the coconut milk, and salt to taste.Cook till the curry starts to boil. Remove from fire andadd the lime juice.

Easy Fried Rice
Ingredients:-
- 1 cup long grain white rice
- 2 eggs
- 2 teaspoons vegetable oil
- 2 bacon rashers, chopped
- 1 carrot, peeled and grated
- 2 shallots, trimmed, finely sliced
- 1/2 cup frozen peas, thawed
- 1 tablespoon soy sauce
How to make
Cook the rice in a large saucepan of boiling water for 12 minutes or until tender. Drain and leave to cool.
Using a whisk, lightly beat eggs in a small bowl. Heat oil in non-stick wok or large frying pan over medium heat. Add eggs. Swirl over base to form an omelet. Cook 2 minutes. Turn over. Cook 2 minutes until set. Transfer to a chopping board. Set aside to cool slightly. Cut into short strips.
Add bacon to wok. Cook 4 minutes until light golden. Add carrot. Stir fry 1 minute. Add shallots, peas and rice. Cook, stirring, 3-4 minutes. Add egg and soy sauce. Stir until heated through. Serve immediately, with extra soy.

Milk Rice Recipe
Ingredients :-
* 2 cups - Short grain white rice
* 3 cups - Water
* 2 cups - Thick coconut milk
* 2 teaspoons - Salt

Egg Fried Rice
Ingredients
# 4 eggs
# 1 spring onion (scallion), chopped
# 50g (1/3 cup) fresh or frozen peas
# 3 tablespoons oil(vegetable oil)
# 740g (4 cups) cooked long grain rice
How to make:-
1 To make this egg fried rice recipe simply beat the eggs in a bowl and add a pinch of salt and 1 teaspoon of the spring onion.Then after Cook the peas in a pan of simmering water for around 2-3 minutes if fresh or around 1 minute if frozen.Now bring a wok and Heat a wok over a high heat, add the oil and heat until very hot. Reduce the heat then add the egg and lightly scramble. Add the rice before the egg is completely set. Increase the heat, then stir to separate the rice grains and break the egg into small bits.Then after add 2 table spoon of soy sauce and 1 table spoon of ajinomoto If you like Then after Add the peas and the remaining spring onion (scallions), and season with salt. Stir constantly for 1 minute. Serve and enjoy!(add Sesame Oil too two three drops are enough) These things are optional.
